Found this in my truck this morning and popped it in… some of the songs made me giggle, considering my relationship with Mika these days.
Billy Currington’s “Don’t”. Craig Morgan’s, “I Got You”. Blake Shelton’s “She Wouldn’t Be Gone” (don’t I wish). Cross Canadian Ragweed’s “Fightin’ For”. That kind of thing. I can’t wait to find out just what else is hiding on this CD. Now, if I could only find my Ali/Blake CD’s…
I miss my mix tapes/CD. Playlists just aren’t the same, ya know?

I review books. The majority of them are eBooks, but on occasion I do get a print book here and there. This one came in the mail yesterday.

I know, I know… I’m a day late, but I wanted to be able to include the recipe that goes along with the picture and couldn’t do that from my phone. Sorry!
Fixin’s for tonight’s dinner… This recipe I stumbled upon by accident and it’s become a favorite around our house. Note: I a) don’t use green chiles – I usually just buy a fresh serrano and sauté it with the onions and ground bee but forgot to buy one and b) forgot to grab the Fritos when I took this pic. OOOOPS.
Barbecue Beef and Corn Shepherd's Pie

Round up the family for a pie full of flavor that’s ready in 30 minutes! This skillet version features Cheddar-bacon mashed potatoes surrounded with corn chips on top a zesty beef mixture.
Prep Time: 10 Minutes
Total Time: 30 Minutes
Makes: 6 servings
1 pound lean ground beef
8 medium green onions, sliced (1/2 cup)
1 cup barbecue sauce
1 can (11 ounces) Green Giant® SteamCrisp® Mexicorn® whole kernel corn with red and green peppers, drained
1 can (4 ounces) Old El Paso® chopped green chiles, undrained
1/2 package (7-ounce size) Betty Crocker® Four Cheese mashed potatoes (1 pouch)
1 1/2 cups hot water
1/3 cup milk
2 tablespoons butter or margarine
1/2 cup shredded Cheddar cheese (2 ounces)
1 cup corn chips
- Cook ground beef and 1/4 cup of the onions in 10-inch nonstick skillet over medium-high heat, stirring occasionally, until beef is brown; drain well. Stir in barbecue sauce, 3/4 cup of the corn and the chilies. Heat to boiling; reduce heat to low to keep warm.
- Meanwhile, cook potatoes as directed on package for 4 servings, using 1 pouch Potatoes and Seasoning, hot water, milk and butter. Stir in remaining onions and corn; let stand 5 minutes.
- Spoon potatoes onto center of beef mixture, leaving 2 1/2- to 3-inch rim around edge of skillet; sprinkle cheese over potatoes and beef mixture. Cover and let stand about 5 minutes or until cheese is melted. Sprinkle corn chips around edge of skillet.

So, I keep stopping and starting with this blog. Trouble is, I never go anywhere or do anything so I'd get discouraged and give up because my pictures were, simply, boring.
I'm trying to let go of that mentality and turning this into a mobile Project 365 of sorts, meaning it will be mostly puctures taken with my mobile phone. Hopefully, this will help keep me motivated.
